The article focuses on a study that followed folks managing type 2 diabetes with a vegan diet (vs. the conventional diabetic diet). The overall tone of the article is supportive and encouraging for a plant-based diet, which is refreshing to see in mainstream media. For those of you that are interested in reading more about diabetes and the vegan diet, also look into Dr. Neal Barnard’s book here. Here’s the bit in the article that I like:
“There were no restrictions on calories, carbohydrate intake or portion size. In
fact, the vegan diet followers consumed more of their daily calories - 75
per cent worth - from carbohydrate-rich foods than did folks on the diabetes
diet.”… “The fact that people assigned to the vegan diet ate as much as
they wanted, increased their daily carbohydrate intake and still experienced
favourable blood-sugar and weight-loss results may seem surprising.”
Yes!! A very good thing indeed! Not having to restrict calories means having a slice of this…
Lemony Luscious Almond Cake with Almond-Maple Sauce. Yep, another new recipe - though the ice cream on the side is from ed&bv… the scrump-dilly-licious Cashew Banana Ice-Cream!
Ok, you know I was kidding about the calorie-restriction bit… I’m certainly not advocating eating vegan desserts as a means to manage type 2 diabetes (before any accusatory comments ensue)! Just having some wee fun, and sharing what I love best about being a vegan cookbook author - creating new and exciting vegan desserts!
And with that, just a reminder that I will be doing a baking demo at The Wellness Show on Sunday, Feb 8th at 2 pm. Hope to see some of you there!
